Zucchini Humus GF/DF

The beauty of this humus is that it is raw, high in essential fats, minerals and anti- microbial, boosting your immune system with garlic.


  • 1 zucchini, peeled and chopped (1/2 cup packed)
  • 3 tbs lemon juice
  • 3 tbs cold pressed olive oil
  • 4 cloves garlic
  • 1 tsp paprika
  • 1 tsp Himalayan crystal salt
  • 1/4 tsp ground cumin
  • Pinch of cayenne
  • 6 tbs raw tahini ( you can use bought for ease!)
  • 6 tbs sesame seeds, soaked for 4 hours rinsed and drained


1.  Combine all ingredients except the tahini and sesame seeds in a high powered blender.

2.  Add the sesame seeds and blend until smooth.

3.  Add the tahini and blend again.

4.  Store in fridge for up to 5 days.

Serve with Nairns oat cakes, salad and crudités.  Delicious with sweet potato wedges too!
