Fresh Pea and Courgette Fritters GF

Great in school packed lunch/picnics! GF

Makes 12 fritters.


  • 500 g courgettes
  • 150g green peas
  • 1 bunch parsley chopped
  • 1 bunch dill chopped
  • 4 spring onions, finely chopped
  • pinch Celtic sea salt
  • grind of black pepper
  • zest from 1 lemon
  • 5 eggs
  • 1/2 cup crumbled goats feta
  • finely chopped smoked salmon


Whisk the eggs in a large bowl then add all the other ingredients and stir well.  Add salt and pepper.

Cool the fritters in a pan over a medium heat in a little olive oil for 2 minutes each side or until cooked through.

Serve on a bed of green leaves.
